How to clean a commercial fryer

A dirty fryer in your kitchen can drastically change the taste of your food and damage your equipment. Regular and proper cleaning of both the equipment and the oil in the fryer will produce crisp, delicious food, help the oil last longer, improve efficiency and protect the fryer.

When it comes to cleaning your commercial fryer, there are three main areas of focus: oil filtration, exterior cleaning and interior cleaning and boiling.

Here are some general guidelines for cleaning a commercial fryer, but you should always consult the manufacturer's manual for specific cleaning instructions.


How often you need to clean or change the oil in the fryer will depend on many factors: what has been frying, how good is the oil, how clean is the fryer? While there is no simple answer, it is important to filter the oil at least once a day. 

How to clean the oil in a fryer

The oil in the fryer can be filtered with a manual fryer filtration machine to save energy or with an electric fryer oil filtration system to save time. Some commercial fryers have filtration systems integrated into the fryer to simplify the process. Each of these processes works by removing small amounts of food left over from previous cooking.

How to know when it is time to change the oil? The life of an oil batch has reached its limit when it begins to smoke at lower than normal temperatures, the colour is dark, it thickens or it begins to smell bad. Do not wait for all these signs before changing your oil. For safety's sake, keep the oil as fresh as possible.



Frequency: Daily

Stainless steel is the most common material used for the exterior of commercial fryers due to its durability and natural resistance to bacteria.

On a daily basis, personnel should wipe the exterior of the fryer with a soft cloth containing mild detergent and wipe in the direction of the finish (side to side or top to bottom; look for "stripes" in the finish). This will prevent the accumulation of grease that degrades the metal.  

If water and detergent are not sufficient to clean the exterior, use baking soda or a non-abrasive cleaner. Rinse the surface and dry immediately to avoid contamination.



Frequency: Several times a week

The interior of a commercial fryer will vary. Some models work with an open bowl style and others with a tube style. Because the construction of these styles is completely different, cleaning will also vary with each style. However, it is important to boil commercial fryers regularly to protect the taste of the food, help the oil last longer, and keep the equipment in good working order.

Boiling refers to the process of removing the old oil and then boiling the water to thoroughly clean the grease and dirt from the tank.

Supplies that are needed: Tank brush, low foam cleaner/degreaser, boiling solution, soft cloths, vinegar and water.

Cleaning of the tube fryer:

  1. Empty the tank and remove any debris and sediment with a small amount of hot oil using a tank brush.
  2. Use a low foam cleaner/degreaser to clean the fryer tank.
  3. Add a commercial boiling solution and let the solution simmer for 15 to 20 minutes. 
  4. Empty the solution from the tank.
  5. Close the drain valve and refill the tank with water.
  6. Add 1 cup of vinegar to neutralize the alkalines left by the cleaner
  7. Bring the solution to a low heat and leave it to stand.
  8. Empty the tank and rinse well with hot water to remove all traces of cleaner.
  9. Dry the tank and close the drain valve.


Cleaning the open-top fryer:

  1. Drain the grease from the fryer while the grease is warm, not hot.
  2. Rinse to remove all residue and food debris.
  3. Fill with water, bring to a boil and add fryer cleaner - the boiling time will depend on the state of the fryer
  4. Turn off the temperature, drain and rinse with water until clean.
  5. Use a vinegar rinse to stir. Drain and rinse thoroughly with clean water
  6. Clean the tray with a soft cloth and let it dry completely.
